After seeing what blind obedience can to to members of the military, Germany implemented the principle of command and obedience. This allowed them to disobey orders that violate human dignity, international law, among others. Should the US have this?

The US does have this. Personnel are not obligated to follow unlawful orders.

Of course, If we didn't have this, officers could do anything they wanted with those under their command.

It's there, but it also takes a ton of guts to disobey for this reason. When I was in, I had to to do disobey a couple of orders for this reason. Not easy, and while I was supported by sr leadership, it could have gone the other way as well.
