What a crappy picture of a typical American taco. Looks worse like a high school lunch taco. A real taco, an amazingly tasty taco is authentic, with cilantro and onion on a soft corn homemade tortilla or two.

Tacos and burritos are the exact same thing. The way they're folded or rolled is why they have different names.
Yes...all Mexican food is basically the same stuff in a different style tortilla. Bigger, smaller, rolled, flat like a torta, grilled like a chimichanga, Fried like taquitos. But Italian is the same...same food, different pasta shape.

There are soft corn tortillas. Most Central Americans don't eat flour tortillas and none of them eat hard shells...that's an American thing.

Well, I *like* it wrapped in a flour tortilla & toasted golden in a bit of butter in a cast iron skillet... which is how I used to eat them - at least weekly - before I started chundering from gluten.
So, since they taste better the first time, and not so much the second, I've elected to go with "burritos guts" in a bowl sans the tortilla... rather than tossing up *my* guts & being sick for 3 days 👍😁
But yeah, technically not "burrito" if it's in a bowl, not wrapped. But I thank Baja Fresh for introducing me to the concept of "Burrito in a Bowl"... where I discovered I get *more* burrito in a bowl than I did wrapped, which meant 2-3 meals for me! (And how much I love their chips with it rather than wrapped!)
Oh do you have celiacs? I feel like they make gluten free wraps you could try! That way you just described it sounds great
Wheat allergy. We mostly just avoid the obvious foods where one would expect to find wheat (bread, pastries, etc) & use corn chips & naturally gluten free foods. Read labels religiously & carefully for new foods or when the products changes for any reason.
Occasionally we splurge for a loaf of GF bread or cookies but they are so much more expensive and easier to just change my choices. GF Cherrios & half a Hershey's bar satisfy the cookie craving & cottage fries can quench the bread craving.
I focus on what I can eat rather than on what will make me ill, so rather than find alternatives for the "old things," I've mostly chosen to make new favorites. I enjoy my "bowl burrito" with my favorite GF corn chips as much as I used to enjoy my grilled burritos. Adaptation!
