Do you eat gluten
My culinary teacher told us we're only supposed to not eat it if we actually have something that prevents us from it
Sometimes I eat almost pure gluten, in the form of the Japanese meat substitute seitan. I have no issues with gluten at all.
I do avoid it in the form of grains, though, because I'm currently on a low-carbohydrate diet, and in its normal state, it's accompanied by lots of starch (wheat and a couple other grains and their products, like wheat flour, bread, etc.).
