Do you have a favorite brand of bacon, or will any brand do?

Do you slice using a knife, or do you use a power slicer?
Just me and my boning knife. It would be nice to have a power slicer but, 1) I can't afford it, and 2) I have a small kitchen so there's no room for storage. Just have to keep the knife sharp.

In an earlier lifetime I was a breakfast cook - got some experience.
I have tried this with cheaper cuts of meat (baloney, sausage, etc,), but it always comes out thick on one edge and thin on the other. I'd make a lousy butcher!!
Try cutting it when it's partially frozen ... the meat needs to be firm to get a good cut when using a knife ... at least it works for me.
OK. . . I'll give it a go! If I screw up, I can always use it in soup!!
you could try slicing bread until you get your technique down ... or just be patient with yourself the first few times.

When I used to eat bacon, I liked Oscar Meyer. But, I try to avoid nitrates now.
Oscar Meyer Turkey Bacon ... it's all my wife allows me to eat. My adult children mock me when they come home for the holidays. They call it "facon". I have now grown to like it more than regular bacon.
