Longhorn Cavern down in the Texas Hill Country. Lots of bats and blind albino fish. It was interesting to learn that the Confederate army made gunpowder there during the Civil War.
Kansas has salt mines you can tour also. It is a pretty cool tour in Hutchinson KS. They store lots of stuff there like movie memorabilia.
