My English teacher is writing me a recommendation letter for college apps, so I told him I would bake him something fall-ish as a thank you. Which of these would be better? (Any other ideas?)
Make sure you hide whatever you bake. Wouldn't want anyone saying it was a bribe. (Sarcasm).
Pumpkin pie cookies
PUMPKIN PIE SQUARE COOKIES
1 c. sifted flour
1/2 c. quick cooking oatmeal
1/2 c. brown sugar
1/2 c. butter
Mix until crumbly and press in 9 x 13 inch pan. Bake for 15 minutes at 350 degrees. Mix 1 (28 ounce) can Libby's pumpkin (follow directions on can). Pour on crust and bake 20 minutes at 350 degrees.
TOPPING:
1/2 c. nuts
1/2 c. brown sugar
2 tbsp. butter
Sprinkle over hot pumpkin filling. Return to oven and bake 15-20 minutes until filling is set. Cool in pan. Cut in 2 inch squares. Serve with whip cream. Makes 2 dozen.
I was thinking something like that, but it's harder to carry a concealed pie to school, and then you just get mobbed... I go to school with 100 of the world's biggest food moochers ;)
